Olive oil is low in saturated fat, about 10-14%, I have never seen a lot of sat fat in olive oil. Most of it is healthy monounsaturated fat. This is important for health, as too much-saturated fat can raise bad cholesterol. I often use olive oil instead of other fats, and it helps me cook delicious dishes that are also good for my heart.
